For a cooler and lighter version of the traditional Christmas pud try this!
Take a litre of good quality vanilla ice-cream, and mix it with plenty of dried fruits such as sultanas, currants, raisins, cranberries and chopped figs plus glacé fruits like apricot, pineapple, pear and peach.
Add about ¼ cup of brandy (optional), ½ cup of cream, some chopped dark chocolate and flaked almonds.
Spoon the whole lot into a mould of your choice lined with plastic wrap, then cover the mixture with the overhanging sides of the wrap.
Freeze until firm and serve sliced.
